Russian Beef and Cabbage Soup Shchi

Shchi or S’chee (pronounced similarly to “she”) is a traditional Russian soup with cabbage as the primary ingredient. When the soup is made with sauerkraut, it is known as sour shchi, and when it is made with sorrel, fresh cabbage and other seasonal greens, it’s known as green shchi. In this class we are going to make 2 types of shchi—with fresh cabbage and sauerkraut.
