Cooking Indian food is looked upon as too complicated to cook at home. It is not so. If variety be the spice of life, then Indian cooking fits the maxim. Dishes are a beautiful blend of spices giving each creation its distinct flavor and taste. India is a vast country each region contributing their individual culinary specialties contingent with the cultural preferences.
Chicken Butter Masala
This recipe is predominately from Northern India, prepared on special occasions, in other words it is not common daily meal. The spices are a blend of onions, ginger, garlic, yogurt, cumin, coriander, turmeric and red chilli powder. The predominant flavor exudes from a blend of cardamom, cinnamon, cloves with butter and cream giving it a rich finish.
Shahi Keema and Egg Masala
A simple recipe comprising of keema (ground meat i.e. Beef or chicken or lamb) cooked with freshly chopped onion, ginger, garlic, tomatoes, sour cream, the predominant flavor coming from freshly roasted cumin seeds. Boiled eggs dusted with turmeric and fried golden brown, enhancing the dish to a specialty cuisine with a sprinkling of fresh cilantro adding color to the dish.
Chicken Korma
Korma is a mild recipe, but with a predominant lasting flavor and color coming from fried onions complemented by the rich warm spices like whole cinnamon, cardamom and bay leaves. The gravy, which in Indian cooking refers to the base sauce is made from ginger, garlic and a dash of red chilli powder and yogurt. Korma is also the basis for another hallmark Indian dish, Biryani. Incidentally Korma is a recipe which dates to the early Mogul regime in India and popularized by the Muslim chefs or Khansamas.
Mixed Vegetable Kofta Masala and (2) Chana Masala
Recipe 1: A good healthy blend of potatoes, cauliflower, carrots and beans, steamed, blended and made into kofta (balls), deep fried and added to a rich tomato-based sauce complimented by onion, ginger, roasted cumin, coriander and cardamom powder. A good classy addition to the table for the vegetarian palate
Recipe 2: Chana (chick peas) Masala is a quick simple vegetarian complement to the meal. For ease and simplicity canned chick peas work well. The masala comprises of blended onions, ginger and tomatoes, with generous addition of turmeric, red chilli powder, cumin, coriander and black pepper. Garnished with freshly sliced ginger and cilantro.
